Crispy Rice Paper Yukjeon (Beef & Zucchini Pancakes)

Yukjeon is one of those classic Korean comfort dishes made with thinly sliced beef, lightly battered and pan-fried until golden.

This version is a lighter take using rice paper instead of a traditional batter. It’s actually much easier to make, but still gives you that crispy texture on the outside.

I used lean beef and added zucchini for a bit of freshness and balance. It keeps the pancakes light but still really satisfying.

I like serving these with a simple green onion salad tossed in a tangy, slightly spicy dressing. The crunch and brightness pair really well with the savory pancakes.

It’s a great option when you want something comforting without feeling too heavy.

Ingredients
  

Pancakes
  • 1 1/2 Korean zucchinis julienned
  • 1/2 tbsp Salt
  • 1/2 lb Lean ground beef
  • 1 tbsp Oyster sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Black pepper
  • 2 tbsp Potato starch
  • 6 sheet Rice paper
  • 3 tbsp Cooking oil
Green Onion Salad
  • 4-5 stalk Green onion thinly sliced
  • 2 cup Ice water
Dressing
  • 1 tbsp Soy sauce
  • 1 tbsp Vinegar
  • 1 tbsp Gochugaru (Korean chili flakes)
  • 1 tbsp Korean plum extract or honey/sugar
  • 1 tbsp Fish sauce
  • 1 tbsp Sesame oil
  • 1 tbsp Sesame seeds
  • 1/2 tsp Black pepper

Equipment

  • Large skillet or frying pan

Method
 

  1. Prep zucchini
    Salt julienned zucchini and let sit for 10–15 minutes. Squeeze out excess moisture.
  2. Make filling
    Add ground beef to the zucchini along with oyster sauce, sesame oil, black pepper, and potato starch. Mix until evenly combined.
  3. Assemble pancakes
    Lightly oil a pan. Place one dry rice paper sheet in the pan and spread a thin layer of the beef and zucchini mixture on top.
  4. Cover and cook
    Dip a second rice paper sheet in water until just pliable, then place it over the filling. Cook over medium heat until the bottom is golden and crisp, then flip and cook the other side.
  5. Slice
    Transfer to a cutting board and slice into bite-sized pieces.
  6. Make green onion salad
    Soak sliced green onions in ice water, then drain. Mix dressing ingredients and toss with green onions. Finish with sesame seeds.
  7. Serve
    Serve the crispy pancakes with the green onion salad on the side.

Difficulty

Intermediate – Working with rice paper and flipping the pancakes takes a little care.

Storage

Best fresh. Texture is crispiest right after cooking.
Refrigerator: Up to 2 days airtight.
Reheat: Pan-fry to bring back crispiness.

Tips

• Squeeze zucchini very well to prevent soggy pancakes.
• Don’t oversoak rice paper — it should be just pliable.
• Spread filling thin for even cooking.
• Cook on medium heat so the outside crisps without burning.
