Oi muchim (오이무침) is a popular Korean side dish made by tossing fresh cucumbers with a flavorful seasoning. Oi (오이) means cucumber, and muchim (무침) refers to a Korean style of seasoned vegetable dishes that are tossed or mixed together before serving.

There are many different versions depending on the region and household. Some recipes include gochujang, while others rely only on gochugaru. This version uses both for extra depth of flavor.

Instead of slicing the cucumbers like a traditional oi muchim, I spiral cut them for a fun twist. The accordion cuts create more surface area for the dressing to cling to while keeping the cucumbers whole and extra crunchy, giving them a much more satisfying bite than thin cucumber slices.

What Cucumbers Should I Use?

I recommend using small Persian cucumbers for this recipe. They’re naturally crisp, have very few seeds, and are the perfect size for spiral cutting.

You can also use Korean cucumbers, though you may need to adjust the pickling time depending on their size.

I don’t recommend using English cucumbers since they contain more water and won’t stay as crisp.

Ingredients
  

Cucumbers
  • 7 Small Persian cucumbers
Quick Pickle
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
Gochujang Dressing
  • 2 tbsp Gochugaru (Korean red pepper flakes)
  • 1½ tbsp Gochujang (Korean fermented red chili paste)
  • 1½ tbsp Sugar
  • 1 tbsp Soy sauce
  • 1 tbsp Fish sauce
  • ½ tbsp Minced garlic
  • 2 tsp Sesame seeds
  • 2 tsp Sesame oil

Equipment

  • 2 chopsticks
  • Mixing bowl

Method
 

  1. Spiral cut the cucumbers
    Trim the ends off each cucumber.
    Place one cucumber between two chopsticks.
    Slice diagonally across the cucumber, letting the chopsticks stop your knife before cutting all the way through.
    Flip the cucumber over and make straight cuts across the other side, again using the chopsticks as a guide.
    Gently stretch the cucumber to reveal the spiral shape.
  2. Quick-pickle the cucumbers
    In a large mixing bowl, combine the rice vinegar, sugar, and salt.
    Add the cucumbers and toss well.
    Let sit for 20-30 minutes.
    Drain the released liquid. Do not rinse.
  3. Prepare the dressing
    In a separate bowl, combine the gochugaru, gochujang, soy sauce, garlic, fish sauce, sugar, sesame seeds, and sesame oil.
    Mix until well combined.
  4. Assemble
    Add the cucumbers to the dressing.
    Toss gently until evenly coated.
  5. Serve
    Serve immediately
