Crispy Tuna Tartare Bites with Crispy Seaweed Cups (Microwave Gimbugak)


The first time I tried this microwave gimbugak hack, I was honestly mind blown. I’ve been finding new ways to use it ever since because it creates crispy seaweed cups without any frying or oil. (See below to learn more about gimbugak.)
This time I wanted something a little lighter and more snackable. I was craving sushi, but not enough to make an entire sushi night, so I paired the crispy seaweed cups with tuna tartare, avocado, yuzu ponzu, and a few spicy toppings.
The combination is honestly so good. The crispy seaweed cups add crunch, the tuna is fresh and savory, the avocado adds creaminess, and the yuzu ponzu ties everything together beautifully.
It feels like something you’d order as an appetizer at a restaurant, but it’s surprisingly easy to make at home.
What Is Gimbugak?

Gimbugak (김부각) is a traditional Korean snack made by coating seaweed (gim) with a starch layer before drying and frying until crispy.
This recipe uses a shortcut version made with rice paper and a microwave to create crispy seaweed cups without deep frying.
The result isn’t a traditional gimbugak, but it delivers a very similar crispy texture that’s perfect for holding toppings.

- Make the crispy seaweed cupsSprinkle sesame seeds and a little salt over a sheet of gim.Quickly dip a square rice paper sheet in room-temperature or cold water and place it over the gim.Fold any excess rice paper onto the back.If using round rice paper, trim any excess and patch uncovered corners so the surface is mostly covered.Cut into 4 squares and place into small microwave-safe sauce bowls.Microwave for about 2 minutes, or until crispy.Repeat with the remaining sheets.
- Prepare avocadoToss the avocado with the lime juice and a pinch of salt.
- Prepare tuna tartareIn a bowl, combine the tuna, soy sauce, sesame oil, rice vinegar (or lime juice), sriracha, green onion, and sesame seeds.Mix gently until combined.
- Assemble tartarePlace a small spoonful of yuzu ponzu onto a serving plate.Set a ring mold over the ponzu.Layer the avocado followed by the tuna tartare.Carefully remove the ring mold.Top with sesame seeds, sliced jalapeño or serrano pepper, microgreens, and spicy mayo, if using.
- ServeServe the tartare alongside the crispy seaweed cups.Spoon the tartare onto the cups just before eating to keep them crisp.
