Potato Egg Breakfast Roll (Breakfast Burrito Inspired)


I love a good breakfast burrito, especially one loaded with avocado, eggs, cheese, and hot sauce. One day I started wondering if I could skip the tortilla altogether and use potato instead.
The potato ribbons overlap and lightly crisp on the bottom before the eggs are added. The eggs help hold everything together, creating a flexible potato wrap that rolls surprisingly well around your favorite fillings.
It’s quick, customizable, and feels a little lighter than a traditional breakfast burrito. I used bacon, avocado, cheddar, and plenty of hot sauce, but you can easily make it your own with whatever fillings you have in the fridge.
I’ve been making this version on repeat lately, and it’s become one of my favorite easy breakfasts.

- Prepare panHeat the oil in a nonstick skillet over medium heat.
- Make potato tortillaUsing a vegetable peeler, peel the potato directly into the skillet, letting the ribbons overlap slightly to form a large circle.Cook for 2–3 minutes, or until the bottom begins to lightly crisp.
- Add eggsCrack the eggs over the potatoes and spread them evenly across the surface.Season with salt.Cover with a lid and cook for another 1-2 minutes, or until the eggs are mostly set but still soft.The eggs help bind the potato ribbons together, making the roll easier to assemble.
- Add fillingsPlace the bacon, avocado, and cheddar cheese on one side of the potato round.
- RollCarefully roll everything into a tight log.
- FinishContinue cooking for another 2–3 minutes until the outside is lightly crisp and the cheese has melted.
- Slice and serveSlice the roll into bite-sized pieces and serve immediately with hot sauce, if desired.
