Soondubu-jang (Marinated Soft Tofu)

Soondubu-jang is one of my favorite easy Korean meal prep recipes because it requires almost no cooking.

Soft tofu is topped with a savory soy sauce marinade made with onion, Korean chives, and chilies, creating a simple dish that’s flavorful, refreshing, and packed with protein.

I especially love serving it over warm rice with gim, sesame oil, and sesame seeds. It’s incredibly easy to put together and makes a great side dish or simple meal throughout the week.

The tofu becomes even more flavorful after resting in the refrigerator, but it’s also delicious right away if you don’t want to wait.

Soondubu-jang (Marinated Soft Tofu)

Soondubu-jang is a simple Korean side dish made by topping soft tofu with a savory soy sauce marinade. It's flavorful, high in protein, and delicious served with rice, gim, and sesame oil.

Ingredients
  

Main
  • 3 packs Soft tofu (soondubu) about 11 oz (300g) each
  • ¼ cup Onion finely chopped
  • ¼ cup Korean chives chopped
  • 1 Green chili finely chopped
  • 1 Red chili finely chopped
Sauce
  • ¾ cup Soy sauce
  • 1½ tbsp Gochugaru
  • 1½ tbsp Sugar
  • 1 tbsp Fish sauce
  • 1 tbsp Mirin
  • ½ tbsp Minced garlic
  • 3 tbsp Water
For Serving
  • Warm rice
  • Gim (seaweed)
  • Sesame oil
  • Sesame seeds
  • Lettuce (optional)

Method
 

  1. Prepare tofu
    Carefully remove the soft tofu from the package and transfer it to a serving plate or shallow container.
    Allow any excess liquid to drain off. If desired, gently tilt the plate and pour away any accumulated water.
  2. Prepare vegetables
    Finely chop the onion, Korean chives, and chilies.
  3. Make the marinade
    In a small bowl, combine the soy sauce, garlic, gochugaru, sesame oil, sesame seeds, sugar, and any other sauce ingredients.
    Mix well.
  4. Assemble
    Scatter the onion, Korean chives, and chilies evenly over the tofu.
    Pour the marinade over the tofu, making sure the vegetables are evenly distributed.
  5. Rest
    Serve immediately, or cover and refrigerate overnight for deeper flavor.
  6. Serve
    Spoon the tofu and marinade over warm rice.
    Drizzle with sesame oil and sprinkle with sesame seeds.
    Serve with gim and lettuce, if desired.

Store in an airtight container in the refrigerator for up to 4 days.

Tips

• Drain any excess liquid from the tofu before adding the vegetables and marinade. Soft tofu naturally releases water, and draining it first helps keep the sauce flavorful rather than diluted.
• Korean chives add great flavor, but regular chives or green onions work well too
• Silken tofu can be used instead of Korean soft tofu (soondubu), though the texture may be slightly different
• Adjust the amount of chilies depending on your preferred spice level
• You can enjoy this right away, but I find the flavor develops even more after resting overnight in the refrigerator
• I prefer adding sesame oil fresh while serving rather than mixing it into the marinade so the flavor stays brighter and fresher
• Serve with warm rice, gim, and lettuce for an easy meal
