Spicy Green Onion Egg Glass Noodle Soup (Gyeran Dangmyeon Guk)

This is one of my go-to meals when I want something warm, spicy, and comforting without spending too much time in the kitchen.

This spicy egg glass noodle soup comes together quickly, but still feels really satisfying. The broth is simple but full of flavor from the chili oil base, and the combination of soft eggs and chewy glass noodles makes it extra cozy.

It’s also a great way to put together a quick meal with just a few ingredients. The eggs add protein, the green onions bring freshness, and everything comes together in one pot.

If you have thinly sliced beef or mandu on hand, they’re great additions as well.

What Is Dangmyeon?

Dangmyeon (당면) are Korean sweet potato glass noodles made from sweet potato starch. They have a chewy, bouncy texture and are commonly used in dishes like japchae and gimmari.

Ingredients
  

  • 60–70 g Korean glass noodles (dangmyeon) soaked in warm water 15 min
  • 4–5 stalks Korean green onion cut into 2–3 inch pieces
  • 1 tbsp Cooking oil
  • 1 tbsp Sesame oil
  • 1 tbsp Minced garlic
  • 1 1/2 tbsp Gochugaru (Korean chili flakes)
  • 2 cup Water
  • 1 Anchovy broth coin optional
  • 1/2 tbsp Fish sauce
  • 1/2 tbsp Soup soy sauce (guk ganjang) or regular soy sauce
  • 3 Egg beaten
  • Salt to tase
  • Black pepper to tase

Equipment

  • Korean earthenware pot or medium pot or saucepan

Method
 

  1. Soak noodles
    Soak glass noodles in warm water for 15 minutes, then drain.
  2. Build base
    Heat cooking oil and sesame oil in a pot. Add green onion, garlic, and gochugaru, and sauté until fragrant.
  3. Add broth and noodles
    Pour in water, then add broth coin (if using), fish sauce, and soup soy sauce. Add noodles and bring to a boil.
  4. Add eggs
    When noodles are almost cooked, slowly pour in beaten eggs. Add black pepper and simmer briefly.
  5. Finish
    Taste and adjust salt if needed. Serve hot.

Storage

Best fresh. Noodles will continue to absorb broth over time.

Tips

• Don’t overcook the noodles — they soften quickly in the broth.
• Pour eggs slowly for soft ribbons.
• Adjust spice level by reducing or increasing gochugaru.
• Add beef or mandu for a more filling version.
• Anchovy broth coin is optional, but highly recommended for deeper, more savory flavor.
